Sodium benzoate is used as preservative E211. It is the sodium salt of benzoic acid. It can be prepared by reaction between sodium hydroxide and benzoic acid. Industrially, sodium benzoate is produced by neutralizing benzoic acid, which is produced by partial oxidation of toluene with oxygen.
Usage
Sodium benzoate is most commonly used in acidic foods such as carbonated beverages, jams and fruit juices (citric acid), pickled cucumbers (acetic acid). It is used in acidic foods because it is easier to react and produces benzoic acid, which prevents the growth of bacteria and fungi. It is also used as a preservative in some cosmetics and medicines.
Sodium benzoate is used to treat urea cycle disorders because of its ability to bind amino acids. The body is then able to exclude these amino acids, thereby reducing the level of ammonia in the body.
Sodium benzoate is added to the fireworks fuel mixture, which gives a squeaking sound when it burns.
